I spent a couple of weeks in Cuba in January. Frankly, I don’t recommend the place; there are hundreds of places in Mexico that are better than the best that Cuba has to offer.
Having said that, I did encounter some bicycle tourists (including a couple of middle-age women from Calgary) and they were doing fine. Towns with overnight accommodations are spaced closely enough so that you can do an easy 50 km./day. Much of the country is flat. Rural Cuba is much nicer than urban areas anyway, and bicycling gives you access to the coastal areas.

Thanks for the update, Bob. Do you have any photos to share?

Yes, I have photos to share: http://broughton.ca/coppermine/thumbnails.php?album=88

But, even better, I wrote up a travel guide. Gave bicycling a couple of mentions, too:
